Blueberry Oat Bran Muffins

  • 2 c. oat bran
  • 1/4 c. brown sugar
  • 1/4 c. chopped pecans
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. applesauce
  • 1/2 c. skim milk
  • 1 egg and 1 egg white, beaten
  • 1/4 c. honey
  • 1/2 c. fresh or frozen blueberries

Preheat oven to 425º. Line a 12 cup muffin tin with paper liners or spray with vegetable spray. Combine oat bran, brown sugar, pecans, baking powder, and salt. Mix applesauce, milk, eggs, and honey. Add this mixture to the bran mixture, stirring the ingredients just enough to combine them. Fold in blueberries. Fill muffin tins and bake for 15 minutes, or until they are lightly browned. Remove them to a rack to cool down. Makes 12 muffins.
